Gourmand

Gourmand fragrances are the newest major perfume family, largely created by Thierry Mugler's Angel (1992), which first proved that overtly edible, dessert-like notes could be wildly successful in fine fragrance. The accord is built around sweet foodie notes: praline, cotton candy, caramel, chocolate, biscuit, and creamy vanilla.

What makes a great gourmand more than just sweet? Tension. The best gourmand fragrances balance their sugary richness against something sharp (coffee, citrus, cinnamon), smoky (tobacco, woods), or animalic (musk, leather) to keep the effect from becoming cloying.
